To cater for the ever growing global appetite for sushi, we have started offering sushi making classes in Tokyo for small to medium groups, led by a long-established, Michelin-listed master of the craft.
It takes place by the city’s Tsukiji Outer Market, a hub for Japanese cuisine. The proceedings begin with a briefing session in which the class was introduced to the basics of sushi making and the importance of using the freshest produce. Ingredients were bought for the day’s session at the market.
Then, under the expert eye of the master, participants were taken through the essential techniques of rice preparation and what to watch for when selecting ingredients. Then they set about assembling the sushi, a task that involves precision, craftsmanship and respect for authentic Japanese cuisine. Finally, it was time to sit down communally and enjoy the fruits of their labours.
This is a truly immersive cultural experience, superior to similar classes thanks to the teacher’s pedigree and the nearby presence to the excellent market.
